Loaves made in house with long fermentation for maximum flavour but are minimally sour -- if you love very sour bread, ours may not be for you. All made with Organic or Sustainably certified Canadian flours - See our FAQ page for more flour info.
Levain based with sustainably grown white flour and a touch of organic whole wheat and rye, this soft loaf is an excellent all-purposed bread with a crisp crust and open crumb. The flavour is mild-to-medium in sour level. Available in round or square loaves.
Eighty percent Organic naturally leavened whole wheat with no added sugar. This loaf has very little sour flavour with a soft but sturdy crumb, softer crust and is excellent for sandwiches.
Long fermented multigrain loaf with a multitude of toasted seeds - sunflower, sesame, black sesame, chia, poppy. Barely-there sour notes highlight the toasted, nutty flavour of the seeds.
Contains 35% whole wheat and 5% dark rye.
Dark rye flour with white and a touch of whole wheat, this loaf has a tight crumb and is perfect for sandwiches.

Roasted in Burnaby, BC, we use 49th Parallel for it's consistency, ethics, and most importantly: classic coffee flavour. We carry Old school espresso (what we use for our drinks), Epic Espresso (light roast coveted by many locals), Decaf, and Longitude 123 for those looking for a drip option.
Genuine Tea is a Toronto based tea company that focuses on ethically sourced and organic teas. They have personal relationships with growers and select the best quality black and green teas. We keep a small selection of loose teas as well as biodegradable tea bags from them. All their packaging is biodegradable.
Diamond Kosher Salt is often used by chefs for it's clean flavour and fine texture that dissolves quickly. This feature is handy so you don't over-season your food. It is less 'salty' than sea salt due to it's texture. Can also be used as a finishing salt.
For a more traditional Jam, we love Moss Berry Farm located outside Stratford, On. Their jams have bright fruit flavour, and they make an amazing Rhubarb Ginger we love pairing with peanut butter (on our days off, upstairs since we don't use peanuts in the bakery). Their Mango Chutney is also excellent.
We carry a very small selection of Japanese knives due to Graham's love of them. Our Tojiro Bread knife has been voted the best bread knife available on Serious Eats.com. We also bring in a few other knives so check with us on our current selection as stock rotates frequently.
Industry chefs often choose the inexpensive Kuhn Rikon Y peelers because they work well and are fast. The carbon steel blade stays sharp and the light body eases stress on the hand. Their pairing knives are especially handy in camp gear as they come with a blade cover.
Special orders require 72 hrs notice, cakes and platters available upon request if possible and may be subject to additional costs
